Happy Mother’s Day, and HAPPY SPRING! Menu
…and the weather is “sort of” cooperating! I love lamb so much, but I don’t offer it very often – I thought this week would be a good opportunity to roast up some shoulder in Lula’s Rosemary-Dijon Paste, and serve it with Roasted Rosemary Potatoes and Spring Peas and Carrots. I don’t often offer a complete meal – take advantage!! Pictured to your left is our fabulous Chicken Penne Pesto – people just can’t get enough.
Everybody goes crazy for Lula’s Meatball Casserole, and the weather just won’t permit it for a while, so I’ve lightened up the idea with our new Chicken Meatball Primavera – loaded with spring veggies and 5 cheeses and our own herbed chicken meatballs. It’s all mixed together in a blush sauce just perfect for spring.
The Prosciutto and Arugula Quiche was so popular I developed another derivation – sort of a “hunter’s quiche” with Prosciutto and Mushroom, and Roasted Broccoli & Welsh Cheddar is back ON! THIS is a picture of our Loaded Chicken Noodle Soup. Healthy to the max with our own bone broth and power greens, rich umami from black mushrooms, tons of garlic (but cooked through so you get the sweetness and the nutrition – NOT the vampire repellant!), and of course your usual suspects – carrots, celery and onion.
