Pickled ANYTHING!! Tis the season for pickling – originated thousands of years ago and still used as a means of preserving the fresh bounty of summer. You can seriously pickle and can a wealth of summer selections including okra (YUCK says Lula; VERY strange considering I’m from South Carolina) and watermelon rind to all varieties of peppers and everything in between such as a delicacy beloved not only down south but also Europe, the Caribbean and Korea – PIGS FEET. Though they’re not my favorite, I applaud nose to tail eating, showing respect for the animal that sustains us.
My husband loves to drain the pickle jar down his gullet when the pickles are finished. He swears by the juice’s healing qualities. I don’t disagree – especially considering that I drink apple cider vinegar every day! So GET PICKLING – they’re good for you and will sustain you through the winter!
