Chilito Pie, Tico Chicken & Roasted Stuffed Apples!

The yard nazis are out in full force - I guess because of Covid so many people are working from home, there is no longer a Saturday Symphony of lawnmowers...now, it's one or two every DAY, usually waking me UP.  Maybe I'm on a short fuse but jeez...give your grass some time to take ROOT!  One consolation is a memory the sound dredges up - I used to spend summers with my grandparents and every. single. Saturday. I was woken up by the sound of my grandfather and his lawnmower, and the smell of sizzling sausage.  Sausage made by my Uncle Flicket - the BEST sausage in the world.  It came from happy pigs on his farm who lived a great life and died a quick death in service to us.I would look out my window, and there was grandaddy, in this white shirt, seersucker pants, leather lace up shoes, and a straw fedora for sun protection.  The sweat would be dripping off of him, but he never acted cranky.  Sometimes I would catch his eye and he would wave.  His face lit up just like mine when we saw each other.You're looking at a picture of my Chilito Pie - an experiment about a month ago that was very successful.  It's layers of tortilla (corn if you don't want the gluten), our Cincinnati Style Chili with Beans, Cheddar Jack Cheese and Scallion.  It's yummy.   Also offered is an old recipe developed for a French friend years ago - and I just had a hankering for it so I thought I'd offer it to you too - Lula's Roasted Apples Stuffed with Leeks and Goat Cheese (pic below!)  You can add some of that fabulous family recipe sausage if you'd like to "spice" it up You can find both of them here along with a bunch of other delightful mouthfuls! The Apple recipe is also offered as an appetizer in puff pastry - close your eyes and imagine in your mouth - crispy puff pastry, creamy goat cheese, sweet leeks and apples, and sausage with JUST the right kick...are you salivating yet?Of course that's not all...check out the menu to see what other surprises await: our fabulous Tico Chicken (Costa Rican BBQ tenders)  is back and we're delighted with our Ham and Sugar Snap Pea Risotto.I'm spring cleaning the kitchen and everything is gleaming...I just hope HOT doesn't come too soon!  With, in, and for LOVE...Lula
